Man grub

Last night's supper was a hit with the testosterone crowd. Gluten and dairy free doesn't mean girly. This was classic man grub.
Beef stew is one of hubby's favorites and adapting it to GFCF was easy. Start with a cut of beef (I used a chuck roast) and cut it into one inch pieces. In a covered container or freezer bag, combine 1/3 cup of your favorite GF flour blend, salt, pepper and other seasonings (I used Penzeys Beef Roast seasoning). Shake beef pieces in the flour mix and brown in a few tablespoons of heated oil. Add a chopped onion to browned beef for a few minutes and then put beef mixture in the crockpot.
Add 4-5 carrots, 5-6 potatoes, some celery (I was out of celery so don't look for any in the picture), 2 cups GF beef broth, a few splashes of Worcestershire sauce, and a bay leaf. Cook on high for 4-6 hours or on low for 10 hours.

  1. I was thinking of your blog yesterday, as I am going as low-carb (so to a great extent wheat-free) as possible for Lent, and I realized your blog would be a great source of inspiration. The only problem is, um, we are mainly vegetarian! But I can see a recipe like this and just think to myself, "Hmmm, that would work well with beans, but still in the crockpot" or your last recipe, which sounds like a perfect time for tofu! : )

    I am noticing you are cooking with cast iron. I got a nice big cast iron pan for Christmas, but I am finding stuff really sticks to it (at least when I try to make scrambled eggs). Any suggestions?

    Did you season it first? Cast iron needs to be seasoned regularly with oil and you can't wash it with soap, just use hot water and dry in the oven or on stovetop burner. I love my cast iron pots and skillets! ~Kari

Kari, I have two pans, and old one which I thought was well-seasoned (I even did it according to the directions I found on the web), and a new one which I have been trying to use according to the given instructions. Both end up with stuff sticking! But if you love yours, then I am sure I will too--I'll keep working with them and will figure it out. : )
